Shrimp with black bean salsa

Ingredients

SHRIMP

1/2 teaspoon grated lime peel

1 tablespoon fresh lime juice

1 tablespoon canola oil

1 teaspoon finely chopped gingerroot

1 clove garlic, finely chopped

1 lb uncooked large shrimp (thawed if frozen), peeled, deveined

SALSA

1 can (15 oz) black beans, drained, rinsed

1 medium mango, peeled, pitted and chopped (1 cup)

1 small red bell pepper, chopped (1/2 cup)

2 medium green onions, sliced (2 tablespoons)

1 tablespoon chopped fresh cilantro

1/2 teaspoon grated lime peel

1 to 2 tablespoons fresh lime juice

1 tablespoon red wine vinegar

1/4 teaspoon ground red pepper (cayenne)

Directions

 

1. In medium glass or plastic bowl, mix 1/2 teaspoon lime peel, 1 tablespoon lime juice, the oil, gingerroot and garlic. Stir in shrimp; let stand 15 minutes.

2. Meanwhile, in medium bowl, mix all salsa ingredients.

3. In 10-inch skillet, cook shrimp over medium-high heat about 5 minutes, turning once, until pink. Serve with salsa.
