Fresh tomato and garlic penne
Preparation time: 40 min
2 1/2 cups uncooked penne pasta (about 8 oz)
1 teaspoon olive oil
3 cloves garlic, finely chopped
12 medium plum (Roma) tomatoes (2 lb), coarsely chopped
2 tablespoons chopped fresh basil leaves
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1. Cook pasta as directed on package, omitting salt and oil; drain.
2. Meanwhile, in 10-inch skillet, heat oil over mediumhigh heat. Add garlic; cook and stir 30 seconds. Stir in tomatoes. Cook 5 to 8 minutes, stirring frequently, until tomatoes are soft and sauce is slightly thickened.
3. Stir basil, salt and pepper into tomato mixture. Cook 1 minute. Serve over pasta.
