Angel hair pasta with basil, avocado and tomatoes
Preparation time: 40 min
8 oz uncooked angel hair (capellini) pasta
2 tablespoons olive or vegetable oil
2 cloves garlic, finely chopped
3/4 cup chopped fresh basil leaves
1/2 to 3/4 large ripe avocado, pitted, peeled and cut into small cubes
4 medium tomatoes, cut into small cubes
1/2 teaspoon salt
1/4 teaspoon pepper
1. Cook pasta as directed on package, omitting salt and oil; drain.
2. Meanwhile, in 3-quart saucepan, heat oil over medium heat. Cook garlic in oil about 5 minutes, stirring occasionally, until tender but not brown; remove from heat.
3. Stir basil, avocado and tomatoes into garlic in saucepan. Toss vegetable mixture with pasta. Sprinkle with salt and pepper.
