1 pork tenderloin (1 lb), trimmed of fat, cut into bite-size pieces
2 teaspoons salt-free southwest chipotle seasoning blend
1 can (15.5 oz) white hominy, undrained
1 can (14.5 oz) Mexican-style stewed tomatoes with jalapeno peppers, garlic and onion, undrained
1 cup water
1/4 cup chopped fresh cilantro
1. Spray 3-quart saucepan with cooking spray; heat over medium-high heat. Sprinkle pork with seasoning blend; spray with cooking spray. Add pork to saucepan; cook 4 minutes, stirring frequently, until browned.
2. Stir in hominy, tomatoes and water. Heat to boiling; reduce heat. Cover; simmer 20 minutes, stirring occasionally, or until pork is no longer pink in center. Stir in cilantro.
