Glazed lemon bars
Preparation time: 2 hr and 5 min
1 cup Bisquick Heart Smart mix
2 tablespoons powdered sugar
2 tablespoons cold butter
3/4 cup granulated sugar
1/2 cup fat-free egg product, 4 egg whites or 2 eggs
1 tablespoon Bisquick Heart Smart mix
2 teaspoons grated lemon peel
2 tablespoons fresh lemon juice
3/4 cup powdered sugar
1 tablespoon plus 1 1/2 teaspoons fresh lemon juice
1. Heat oven to 350 F. In small bowl, mix 1 cup Bisquick and the powdered sugar. Cut in butter, using pastry blender or fork, until mixture looks like fine crumbs. In ungreased 8-inch square pan, press mixture on bottom and 1/2 inch up sides.
2. Bake about 10 minutes or until light brown. Meanwhile, in small bowl, mix all remaining bar ingredients; pour over baked layer.
3. Bake about 25 minutes longer or until set and golden brown. Meanwhile, in small bowl, stir all glaze ingredients until smooth.
4. While bars are warm, loosen edges from sides of pan. Spread glaze over bars. Cool completely, about 1 hour. Cut into 6 rows by 4 rows.
