Lemon chicken with olives
Preparation time: 40 min
4 boneless skinless chicken breasts (about 1 1/4 lb)
2 teaspoons olive or canola oil
1 tablespoon lemon juice
1 teaspoon salt-free lemon-pepper seasoning
1/4 cup sliced ripe olives
4 thin slices lemon, cut in half
1. Set oven control to broil. Spray rack of broiler pan with cooking spray. Starting at thickest edge of each chicken breast, cut horizontally almost to opposite side. Open up each cut chicken breast so it is an even thickness.
2. In small bowl, mix oil and lemon juice. Drizzle over both sides of chicken. Sprinkle both sides with lemonpepper seasoning. Place on rack in broiler pan.
3. Broil with tops 4 inches from heat about 10 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165 F). During last 2 minutes of broiling, top each chicken breast with 1 tablespoon olives and 2 lemon slice halves.
