Mixed fruit and carrot smoothie
Preparation time: 10 min
2 cups mixed yellow, orange and red fruit, like sliced peaches, strawberries, mango and pineapple
1 medium avocado, pitted
1/2 banana, sliced
2 cups carrots, steamed and cooled
2/3 cup plain Greek yogurt (low fat or fat free)
1 cup plain almond milk
1.Steam fresh or frozen carrots in the microwave for about three minutes and pop them in the freezer to cool.
2.Measure out and slice remaining ingredients, placing them in your blender.
3.Add carrots when they've cooled.
4.Blend for several minutes, until the smoothie is smooth.
5.Pour and serve, garnishing with slices of fresh or frozen fruit, if desired.
