Healthified burgers with dill sauce
Preparation time: 40 min
1 small onion, finely chopped (1/4 cup)
1/4 cup chopped fresh parsley
2 cloves garlic, finely chopped
1/4 teaspoon salt
1 lb extra-lean (at least 90%) ground beef
1/3 cup plain fat-free yogurt
1 tablespoon stone-ground or Dijon mustard
1 tablespoon chopped fresh or 1 teaspoon dried dill weed
1 teaspoon balsamic vinegar
1/4 cup chopped seeded cucumber
Sliced cucumber, tomato and red onion and/or fresh spinach leaves,if desired
1. Set oven control to broil. In large bowl, mix chopped onion, parsley, garlic and salt. Add beef; mix well. Shape mixture into 4 patties, 3/4 inch thick.
2. Place patties on broiler pan. Broil with tops 3 to 4 inches from heat 12 to 14 minutes, turning once, until meat thermometer inserted in center of patties reads 160 F.
3. Meanwhile, in small bowl, stir yogurt, mustard, dill and vinegar. Stir in chopped cucumber.
4. Spoon 2 tablespoons dill sauce over each burger. Serve with sliced cucumber, tomato and red onion and/or spinach leaves.
