Country ham and asparagus bake

1 cup chopped cooked ham
1 medium onion, chopped (1/2 cup)
1/4 cup chopped red bell pepper
1 box (9 oz) frozen asparagus cuts
2 cups fat-free egg product or 8 eggs
2 cups fat-free (skim) milk
1 cup all-purpose flour
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried tarragon leaves
1 cup shredded reduced-fat Cheddar cheese (4 oz)
1. Heat oven to 425 F. Generously grease bottom and sides of 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. Sprinkle ham, onion, bell pepper and frozen asparagus into baking dish.
2. In medium bowl, beat eggs, milk, flour, Parmesan cheese, salt, pepper and tarragon with fork or whisk until smooth; pour over ingredients in baking dish.
3. Bake uncovered about 20 minutes or until knife inserted in center comes out clean. Sprinkle with Cheddar cheese. Bake 3 to 5 minutes longer or until cheese is melted. Let stand 5 minutes before cutting.
