Colorful Crab Salad Sandwich

Ingredients

Wheat bread

6-ounce can of crab meat (drained)

2 tablespoons light mayonnaise

1/4 cup shredded carrot

1/4 cup diced celery

1 tablespoon chopped red onion

1/2 cup rinsed, drained canned white beans

1 tablespoon chopped red onion

1 teaspoon olive oil

1 tablespoon balsamic vinegar

Directions

 

1.Mix a 6-ounce can of crab meat (drained) with 2 tablespoons light mayonnaise, 1/4 cup shredded carrot, 1/4 cup diced celery and 1 tablespoon chopped red onion.

2.Spread mixture onto a slice of whole wheat bread and top with second slice of bread.

3.Serve with 1/2 cup rinsed, drained canned white beans tossed with 1 tablespoon chopped red onion, 1 teaspoon olive oil and 1 tablespoon balsamic vinegar.
